Santa Fe Soup

As served for Koinonia Fall 2008 by the Friendship Class  --  serves 8-10

 

 

1 lb Hamburger

1 onion (slice into small pieces)

2 cans whole kernel corn (do not drain)

2 cans diced (or chopped) tomatoes

1 (10 oz) can Rotel tomatoes

2 cans Ranch Style Beans (do not drain)

1 lb Velveeta Cheese 

 

Cook the hamburger with the onion (drain fat if necessary).  Add other ingredients except the cheese.  Bring to a boil then simmer on low heat for at least 30 minutes.  Slowly add the Cheese after breaking into small chunks allowing each piece to melt.
